The Reinheitsgebot of 1516 restricted beer to water, barley and hops, and the constraint became an identity. German brewing rewards precision over novelty, and its regions stayed stubbornly distinct: smoked Rauchbier in Bamberg, pale Helles in Munich, Kölsch that may only be called that in and around Cologne.
