Western Europe
No country packs more brewing variety into less ground. Belgium runs from Trappist monasteries operating under a certification only a handful of abbeys hold, through spontaneously fermented lambic that can only be made in one small stretch of countryside, to sour red ales aged in oak for two years. Yeast is treated as an ingredient with opinions rather than a process step.
