Spontaneously fermented from wild yeast in the brewery's own air, aged in oak, then blended young with old and refermented in the bottle.
Spontaneously fermented with wild yeast from the air of the Pajottenland and Senne valley, using unmalted wheat and aged hops. Gueuze is a blend of young and old lambic refermented in the bottle.
