Brewed at a Benedictine monastery on a hill above the Ammersee, where the beer hall is part of the pilgrimage.
Originally limited beer to water, barley and hops. Yeast was not yet understood. Not a modern legal requirement for most beer sold in Germany, but still claimed as a mark of tradition.
