Malt kilned over open beechwood fires. Before indirect kilning every beer tasted like this; Bamberg simply never stopped.
Originally limited beer to water, barley and hops. Yeast was not yet understood. Not a modern legal requirement for most beer sold in Germany, but still claimed as a mark of tradition.
